Beef Goulash Soup

Ingredients:
- 6 oz boneless beef top sirloin steak
- 1 tsp olive oil
- 1 medium onion, chopped
- 2 cups water
- 14 oz beef broth
- 14.5 oz low-sodium diced tomatoes, undrained
- 1 medium carrot, thinly sliced
- 1 tsp cocoa powder
- 1 clove garlic, minced
- 1 cup thinly sliced cabbage
- 1 oz dry bow-tie noodles
- 2 tsp paprika
- 0.25 light sour cream
Directions:
- cut steak into cubes. Stir-fry beef in a large saucepan in hot oil over medium-high heat for about 6 minutes. Add onion and stir-fry for another 3 minutes.
- Stir in water, broth, undrained tomatoes, carrot, cocoa powder, and garlic. Bring to boiling, then reduce heat. Simmer, uncovered, for about 15 minutes.
- Add cabbage, noodles, and paprika to the pot. Continue simmering for 7 minutes.
- Serve topped with sour cream and additional paprika
