Buttermilk Pancakes

Ingredients:

Directions:

  1. In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, stir together buttermilk, egg white, oil, and vanilla. Add to flour mixture and stir.
  3. coat a skillet with cooking spray and preheat over medium heat
  4. Pour half of batter into hot skillet and cook 2 minutes per side. Repeat for other half of batter
  5. Makes 2 large pancakes. Serve with maple syrup or fruit spread
