Buttermilk Pancakes

Ingredients:
- 0.5 cup all-purpose flour
- 1 tsp sugar
- 0.5 tsp baking powder
- 0.125 tsp baking soda
- 0.125 tsp salt
- 0.5 cup buttermilk
- 1 egg white
- 0.5 tbsp cooking oil
- 0.5 tsp vanilla extract
- nonstick cooking spray
- maple syrup or fruit spread
Directions:
- In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
- In another bowl, stir together buttermilk, egg white, oil, and vanilla. Add to flour mixture and stir.
- coat a skillet with cooking spray and preheat over medium heat
- Pour half of batter into hot skillet and cook 2 minutes per side. Repeat for other half of batter
- Makes 2 large pancakes. Serve with maple syrup or fruit spread
