Ginger Beef Stir-Fry

Ingredients:
- 8 oz. beef top round steak
- 0.5 cup reduced-sodium beef broth
- 3 tbsp reduced-sodium soy sauce
- 1 tbsp corn starch
- 1 tsp sugar
- 1 tsp grated fresh ginger
- nonstick cooking spray
- 1.25 lbs. asparagus spears, cut into 2-inch pieces
- 1.5 cups sliced mushrooms
- 4 green onions, sliced diagonally into 2-inch pieces
- 1 tbsp cooking oil
- 2 cups rice
Directions:
- Start the rice cooking
- Thinly slice beef across the grain into strips. Set aside.
- For sauce, in a small bowl stir together beef broth, soy sauce, corn starch, sugar, and ginger. Set aside.
- Coat an unheated wok with cooking spray, then preheat the wok in medium-high heat. Add asparagus, mushrooms, and green onions. Stir-fry for 4 minutes, then remove from wok.
- Add oil to wok. Add beef to wok and stir-fry for 3 minutes. Stir sauce and pour into wok. Cook and stir until thickened.
- Return veggies to the wok and stir-fry to coat. Serve with rice.
