Peachy Rice Pudding

Ingredients:
- 1.3 cups of water
- 0.6 cups long grain rice
- 6 oz evaporated fat-free milk
- 0.3 cups dried cranberry bits
- 2 tsp honey
- 0.25 tsp ground cinnamon
- 0.125 tsp salt
- skim milk
- 1 cup frozen sliced peaches, thawed
- 0.25 cup vanilla fat-free yogurt
- ground nutmeg
Directions:
- Add water and uncooked rice to a saucepan and bring to boiling. Reduce heat, cover, and simmer for 20 minutes.
- Stir in evaporated milk, cranberry bits, honey, cinnamon, and salt into rice. Bring to boiling, then reduce heat to medium-low. Cook, uncovered, for 5 minutes while adding milk and stirring to desired consistency.
- Serve topped with peaches, yogurt, and nutmeg.
