Roasted Asparagus with Gruyere

Ingredients:
- 1.5 pounds asparagus spears
- 1 onion, cut into wedges
- 1 red bell pepper, cut into strips
- 1 tbsp olive oil
- salt
- black pepper
- 1 oz Gruyere cheese, grated
Directions:
- Preheat oven 400°F.
- Cut off asparagus bases, then place asparagus, onion, and bell pepper into a 15x10-inch baking pan. Drizzle with olive oil, salt, and pepper.
- Roast, uncovered, for 20 minutes in the oven. Sprinkle with cheese and let stand a couple minutes until cheese melts.
