Steak with Onions and Carrots

Ingredients:

Directions:

  1. In a large skillet of hot oil, brown onions for about 5 minutes. Remove onions and set aside.
  2. Add carrots to skillet and cook about 3 minutes, turning occasionally. Remove skillet from heat
  3. Add potatoes, broth, beer, brown sugar, and half of the thyme to the skillet. Return onions to skillet and return skillet to heat. Bring to boiling, then reduce heat, cover, and simmer for 35 minutes.
  4. Meanwhile, preheat the broiler. Use remaining thyme, salt, and pepper to season steak. Place steak on broiler pan and broil on the low setting for 32 minutes.
  5. Remove vegetables from skillet. Boil juices for about 2 minutes. Place steak and vegetables on plates, and spoon juices over.
